Clean Eating Tip

Eat breakfast!  The champion of all breakfast foods:  OATMEAL! It regulates your blood sugar and keeps you full longer.  One cup of oatmeal contains 8 grams of fiber – that’s a full third of the dietary reference intake!  Ask me for my special OATMEAL blend! I keep it in the fridge at Momentum and LOVE to share!

Grilled Chicken Kabobs!

YUMMY!!!

Ingredients:
1 lb Boneless, skinless chicken breats cut into 16 squares
16 Whole button mushrooms (ends trimmed)
1 Green bell pepper cut into 16 pieces
16 Cherry Tomatoes
Fat free Zesty Italian dressing

Directions:
1. Marinate Chicken in dressing for atleast an hour or over night.
2. Soak eight 8 inch wooden skewers for at least 10 minutes in cold water. Alternate ingredients on the skewers.
3. Grill kebobs for 2 to 3 minutes on each side (8-12 minutes total), or until chicken is no longer pink and the begetables are tender.
4. Serve with brown rice or over a salad and enjoy!

NOTE: Change up the vegetables! Use red or yellow bell peppers, onions, or chunks of zucchini or squash.

FAVORITE FOOD:  Pizza (This is Lisa’s guilty pleasure – She doesn’t frequent any one particular pizza joint but when pressed for a favorite – Fleur de Lis! – Frank has an opinion on this, too….)

I cannot believe  never made this connection before!)
IF YOU COULD BE A SUPERHERO, WHAT WOULD YOU WANT YOUR SUPERPOWERS TO BE?:  “To help people find happiness in their lives.  Have a magic wand!!!”
WHAT WOULD PEOPLE BE SURPRISED TO LEARN ABOUT YOU?  “I married my high school sweetheart.  We grew up together.”  (This gave me chill bumps! They actually grew up together in the same small town ~ can you imagine marrying somebody you literally grew up with?! and I’m not talking your second cousin…bhahahahahaha! Lisa assures me that they are NOT related!)
WHAT IS YOUR DREAM VACATION AND WHY?  “The Eastern Caribbean on a secluded island with amenities.”   
WHAT IS YOUR FAVORITE JAY QUOTE?  “Elongate the abdominals.”  (I have not heard Jay use this one yet – I love the originality of this answer!)
WHAT IS YOUR FAVORITE CLASS AT MGF AND WHY? “I really like them all but my number one is the 40/60 Anytime circuit because it works everything!”   
HOW WOULD YOU DESCRIBE MGF IN 1 WORD? “Supportive.”
HOW WOULD YOU DESCRIBE YOURSELF IN 3 WORDS?  “Caring, loyal, and outgoing.”  (Lisa added HOT as an afterthought – I love it – CONFIDENT MAMA! Frank described Lisa as FANTASTIC! Da naz – cooler than cool! I couldn’t agree more.)
WHO IS FRANK?  Frank is one of Lisa’s patients who has been coming to her since 1999!  She has been cleaning his teeth forever, so she must be good.  ;-)   He was such a sport – he let me take pictures of him while being treated, talking through the work being done…actually never stopped talking (Ha!).  Frank, if you’ re reading this…I’m going to get you in a class at Momentum if it’s the last thing I do!!
LISA’S MOMENTUM EXPERIENCE IN HER OWN WORDS:  “The group setting at Momentum was the big draw for me!  Growing up doing some kind of team sport, it gives me the opportunity to experience that camaraderie again.  About 6 years ago, Jay set me up on a workout program when I was experiencing major back issues.  The classes have enhanced that improvement.  The attention, knowledge, and encouragement you get from all the trainers keep me doing what I need to stay healthy and strong!  I have met some of the nicest people in the classes as well.  Everyone…members and trainers are so positive!! I have never felt better!”
WHAT DOES MGF HAVE TO SAY ABOUT LISA?  Lisa ROCKS!  She is always ready to have FUN!! The second I pull out my camera, she strikes a pose – sometimes with feathers, sometimes without! ;-)   In all seriousness, Lisa is a really hard worker – she comes in and works HARD!  It was so fun to see her outside of Momentum in her work environment!  She is as fun with her patients as she is at Momentum.  Who likes to go to the dentist for a teeth cleaning?!  Lisa’s patients – That says it all!

Ingredients:
6 Ounces whole wheat angel hair pasta
1/3 Cup all purpose flour, divided
2 Cups reduced sodium chicken broth
4 Chicken Cutlets, trimmed
3 Teaspoons extra virgil olive oil
1 Ten ounce package of mushrooms sliced
3 Garlic cloves, minced
1/2 Cup white wine
3 Tablespoons lemon juice
1/2 Cup fresh chopped parsley
2 Tablespoons capers
2 Teaspoons butter
Salt and Pepper

Directions:
1.Bring large pot of water to boil and cook pasta. Drain.
2.Meanwhile, whisk 5 teaspoons flour and broth in a small bowl until smooth. Place the remaining flour in a shallow dish. Season chicken with salt and pepper and dredge both sides in the flour. Heat 2 teaspoons oil in a large nonstick skillet over medium heat. Add the chicken and cook until browned and no longer pink in the middle, 2 to 3 minutes per side. Transfer to a plate; cover and keep warm.
3.Heat the remaining 1 teaspoon oil in the pan over medium-high heat. Add mushrooms and cook, stirring, until they release their juices and begin to brown, about 5 minutes. Transfer to a plate.
4. Add garlic and wine to the pan and cook until reduced by half, 1 to 2 minutes. Stir in the reserved broth-flour mixture, lemon juice and a dash of salt. Bring to a simmer and cook, stirring, until the sauce is thickened, about 5 minutes.
5.Stir in parsley, capers, butter and the reserved mushrooms.  Toss the pasta in the pan with the remaining sauce. Serve the pasta topped with the chicken and the sauce.

Nutrition:
Per serving: 397 calories; 9 g fat ( 3 g sat , 3 g mono ); 54 mg cholesterol; 45 g carbohydrates; 0 g added sugars; 28 g protein; 5 g fiber; 544 mg sodium; 609 mg potassium.

 

Clean Eating Tip of The Week

Drink WATER!! If you’re active (and I know you are!), shoot for 3 liters per day.  An easy way to get this in is to fill three 1-liter  containers in the evening and place them in your refrigerator.  The next day, set your sights on getting all 3 containers gone before your healthy evening snack.
